Long before flags were stitched and borders were drawn, this city was already steeped in barley and blessed by hops. Monks in silent cloisters whispered prayers over bubbling cauldrons of malt, crafting potions so potent they outlived dynasties. Revolutions were plotted under low-beamed tavern ceilings, where tankards clinked and secrets brewed stronger than any ale.

The spirit of the Pilsner — golden, crisp, and crowned with a snowy head — was conjured here and unleashed upon the world, bewitching palates from Prague Castle to far-off continents. Yet even as modern brewers stir up rebellious batches with punk rock souls, the old ways linger: master bartenders pour with ritual precision — Šnyt, Hladinka, Mlíko — each a spell for the perfect mouthfeel.

U Medvídků — part historic beer hall, part microbrewery, part hotel — brewing since 1466 and home to Prague’s strongest lager.

  • X-Beer 33 — Deep mahogany, thick caramel body, warming boozy sweetness (12% ABV!), surprisingly smooth despite its bite — sip slowly, lest you wake up speaking fluent Czech.

Witch’s whisper: Pair that X-Beer with pickled cheese and hearty pork knuckle, and swear an oath to never underestimate a beer named after a bear.

U Fleků Brewery & Beer Hall — the oldest continuously operating brewpub in Prague, tapping dark lagers since 1499.

Inside its timbered halls, candlelight flickers off tankards of Czech Premium Pale Lager and the house’s signature Tmavé Pivo (Czech Dark Lager).

Úsupa 12° Lager — Pale gold, subtle Saaz hop aroma, smooth malt backbone, crisp and refreshing finish.

Úsupa Amber Ale — Deep amber, notes of caramel and toasted biscuit, balanced bitterness, velvety mouthfeel.

Witch’s whisper: Order a flight of Úsupa’s fresh taps and sip slowly — the magic is in tasting how Czech malt sweetness dances with crisp hops. Pair it with their hearty goulash or pickled cheese for an enchantingly authentic Prague beer spell.

Pairings & Food

A witch never drinks on an empty stomach. At U Fleků, the roast duck with dumplings and red cabbage pairs devilishly well with the dark lager — the caramel malt coaxes out the sweetness of the cabbage, while the crisp lager cuts the duck’s richness.

At Lokal Dlouhááá, I tried svíčková (braised beef in creamy vegetable sauce with cranberry) alongside a refreshing Pilsner Urquell. Beer and gravy: a holy pairing.

Curiosity sip: Try a “řezané pivo” — half light lager, half dark lager, poured artfully so each stays layered.
